best chocolate cake #2 – Queen of Sheba

This is an old French recipe.
It is the most sumptuously moist and rich chocolate cake I have ever eaten!
Growing up, this was usually the recipe of choice whenever there was a birthday at home and chocolate cake was requested…

You’ll soon find out why…!


1x 25 cm springform tin, greased and lined
250g Best Quality Chocolate
125g butter
8 (yes. that’s EIGHT) free range eggs
180g caster sugar
50g sifted plain flour
icing sugar (optional)

Preheat oven at 200˚C/ gas mark 6.
1. In a thick bottomed pan, melt the butter and chocolate on a low heat. Leave to cool.
2. Separate the eggs; whisk the egg whites until the soft peak stage (when you lift the beaters the peaks should drop slightly)
3. In a clean bowl, beat together the egg yolks and the sugar until the mixture is almost white; this will take several minutes – a ribbon effect should form on the surface when lifting the beaters out of the bowl.
4. Gently fold the egg whites into the egg yolk mixture, using a metal spoon.
5. Then add the cooled melted chocolate to the mixture, still using your metal spoon – so as not to get rid of all the air bubbles; this should look like chocolate mousse.
You may be tempted at this stage to have a little lick.
I wouldn’t blame you.
Just don’t do it if you’re pregnant…
6. Finally gently add the flour; doing this will make the batter drop slightly, but this is normal 🙂

Bake in oven for up to 25 minutes
This cake MUST be slightly undercooked so when testing it after 20 minutes, the inserted skewer should NOT come out clean!
Transfer onto a wire rack to cool after leaving it in its tin for about 10 minutes.
Sprinkle with icing sugar.
Cut into small squares once cool

Even better than brownies – but oh so VERY rich…
